Recipe of the Week: Spaghetti Squash with a Quinoa Ragu

por | | 0 comments

Spaghetti squash is one of those amazing things the earth created that is so crazy-delish and crazy-easy to prepare, you'll wonder why you haven't been using this as a base for pasta sauce for your entire life!  As a gluten-free gal, I am always looking for great pasta alternatives and spaghetti squash has almost ALL of the gluten-free pastas beat, hands down.  It can hold up to heavy sauces, but has a delicate enough flavor to hold up to lighter dressing, say a lemon, thyme, and olive oil coat...The options are as endless as what you have chillin' in your fridge.

Spaghetti Squash with a Quinoa Ragu
Serves 4-6 hungry peeps
Ingredients:
One large spaghetti squash, 5-6 pounds
Extra virgin olive oil
3 stalks celery, cleaned and diced
1 large onion, cleaned and diced
2 large carrots, peeled and diced
Salt and pepper
1 can diced low sodium tomatoes
1/4 cup sun-dried tomato paste
1/4 cup sliced sun-dried tomatoes packed in oil
1 cup red or white quinoa
Healthy squirt of Bragg's Liquid Aminos
1 t crushed red pepper
1 t dried oregano
1 t dried basil
1 bay leaf
Shredded Parmesan to garnish if you wish

Preheat your oven to 375 degrees.  Now it's time to squash wrestle.  I will warn you that the spaghetti squash can be a wiley lil' bugger, so use *CAUTION* and *COMMON SENSE* when bashing this open...and you will need to bash.  The most effective way I've found to slice the squash open is to take a heavy cleaver and carefully work the point of it through the rind and into the flesh of the squash.  Work it in until you can't push the cleaver any farther and it seems stuck.  Then take both hands on the handle of the cleaver and bash it down firmly on your chopping board.  This should take the cleaver clean through the squash!  You should have two halves of squash and all fingers left.

Turn the squash face down on a lightly oiled cookie sheet and place in your preheated oven.  It will need about and hour to bake, so you might want to lollygag with your ragu.

45 minutes before you take your squash out of the oven heat a generous squirt of olive oil in a large saucepan over medium heat.  Add the onions, carrots, and celery.  Add a little salt to draw the sugars out of the onions to help them soften and caramelize. (FYI this is called a mirepoix, shi shi shoo shoo, right?)  While this is working, start a small saucepan with two cups of water boiling with the cup of rinsed quinoa.  Make sure to rinse it well since the powder on the quinoa is full of saponins that can taste bitter and gross.  Once it's at a boil, reduce to medium heat and cover until the quinoa has absorbed all the water.

Add the bay leaf, basil, oregano, and crushed red pepper to the mirepoix along with the can of un-drained crushed tomatoes, tomato paste, and sun-dried tomatoes.  Add Bragg's and pepper to taste.  Add the quinoa and mix until well incorporated.  Let heat on low while you prep your spaghetti squash.

Remove the squash from the oven and turn over the face-down slices with an oven mitt.  You'll need the mitt to hold the slice while you use a fork to scrape the flesh out of the rind and into a medium bowl.  Continue until all the flesh is separated and stringy.  Dress with a little olive oil, Bragg's and pepper.  Portion into bowls and ladle a generous portion of the quinoa ragu on top.  Garnish with Parmesan cheese if you're vegetarian.  Enjoy!

— I was talking to someone today about prostate cancer & it inspired me to share with you what I'd personally do if I had cancer. Remember, this is not medical advice! I'm simply letting you know what I would do.

— I don't have a desire to cure anyone of anything, nor attack any diseases. I simply want to share with you my passion for achieving, maintaining & increasing my health...& let you know all the tips, tricks, tools, techniques, lifestyle & dietary choices I've personally found to be the most conducive for this...& that I've since observed working for others too. It's up to you what you want to do with this information. You may take it or leave it...as remember, I'm not giving you medical advice.

— As many of you know, my good friend Dave the Raw Food Trucker has personally healed himself of Type II Diabetes & Stage IV Colon Cancer by consuming raw green vegetable juices like this one across the span of many weeks....oh, and he lost close to 200 pounds too. You can check out the ongoing series of videos I do with him here: http://bit.ly/mbyII

— So if I had cancer, I'd bring the life force into my body & flush out dead, dying cells. Most importantly, I would strengthen up all my healthy cells & immune system with food that is meant for the human body & I would concentrate all that energy & nutrition into a living juice, so that my cells can immediately be bathed in nutrition & hydration.

— At first glance this juice might not appear 'pretty,' but once you drink it you're gonna see just how unreal & absolutely delicious it tastes!

— What's been going on in the 'real world' with regards to overcoming disease & finding health just doesn't appear to be working...organs & glands are being cut out & harsh treatments are done which damage our healthy cells & acidify the body.

— For me, I instead choose to CULTIVATE LIFE! I wash the cells & tissues of my body clean, as well as strengthen & alkalize them! Attacking dead cells while also attacking one's healthy & living cells just doesn't make any sense to me personally.

Which one of these sounds better to you?
A) Attack all of the cells in your body, both diseased & living, OR;
B) Strengthen the healthy, living cells of your body

Well, if I wanted to live a long life full of health, vitality & strength then I personally would be choosing option 'B.'

— For those who think that me drinking green juice if I had cancer instead of getting chemo or radiation is pure quackery, then I say this: "Well, since most people are NOT getting rid of their cancer through conventional treatments & neither are many of those people getting healthy from chemo....well, drinking green juices certainly couldn't hurt then, now could it...especially if I had already tried the conventional treatments & they had not worked...for not only would I not be damaging my healthy cells in the process of drinking that living green juice, but I would be STRENGTHENING them!"

— I may not have a bunch of fancy letters after my name, but what I do have is the LOVE...and a caring for YOU & for the TRUTH. I don't claim to hold the golden key to Truth...but I am always driven by it & I'm always seeking it.

— One could choose to decide to simply try drinking green juices for just a month or two, to see what happens! So why not simply *try* the green juice path? To neutralize acidity, clear congestion, lose weight, and/or possibly heal oneself of cancer or diabetes like Dave did?

— Too many complex carbohydrates & animal foods + not enough live-giving fruits & vegetables from Mother Earth has essentially lowered the cellular respiration in your body...your cells literally can't breathe & so can't get the energy they need to function optimally.

IT SEEMS AS THOUGH MANKIND HAS LOST ITS MIND....BUT NOW IT IS TIME TO RETURN TO THE INFINITE WISDOM OF MOTHER NATURE & OF OUR CREATOR, AND SO REMEMBER THAT ALL THAT WE HAVE NEEDED TO SURVIVE & THRIVE HAS ALWAYS BEEN UPON THE EARTH.

I love you all.

Peace, Dan

fall wedding invitations OPPD, Día 21

por | | 0 comments

Hoy es el día 21 del One Page Per Day Project. Estoy agotada. The bar, well, my bar, is too high.

Whatever that is.

Title: Hayek vs. Keynes Sequel Sneak Peek at The Economist Buttonwood Gathering

On October 25th, an audience of financial managers and CEOs, politicians, central bankers and nobel prize winning economists at The Economist Magazine's Buttonwood Gathering were treated to an unusual experience: a live rap battle between John Maynard Keynes and F. A. Hayek.

Following a presentation by Nassim Taleb, the lights went down in the auditorium and Fear the Boom and Bust blasted onto the screen. This video picks up at the end of that special presentation, where Keynes and Hayek stepped onto the stage to give a preview of the next EconStories music video.

In the final new video, which will be completed in the months ahead, expect many more lyrics and an all new beat.

Lastly, Russ Roberts and John Papola took the stage with John Micklethwait, editor-in-chief of The Economist for a brief Q&A about the origins of FTBB and the resurgence of Hayek in the global debate over the economy.

The complete set of presentations are available at http://buttonwood.economist.com
